Adding dried herbs and spices to your home-canned chicken is a great way to pre-flavor the meat so it is ready to be used in recipe creation. Pressure canning the spices into the chicken infuses the meat fibers with flavor giving each dish depth.

When you pack the chicken into the jars, add any spice blend you typically cook with or use any of the spice blend recipes below. When adding dried spice blends to your raw packed chicken or poultry, the following math applies to each jar:

1½ tablespoons to every Quart

2½ teaspoons to every Pint

If you dehydrate your own herbs, or like to purchase bulk quantities at the store, it is so much fun creating your own dried spice blends in large quantities for canning and for cooking. Simply add each seasoning to a mixing bowl, whisk together and store in an air tight container. You may also use your canning jars, lids and rings and vacuum sealer, like a FoodSaver. The Mason jar attachment will be needed to seal the lid to the jar, but doing so is a wonderful way to create large and store homemade spice blends long-term.

Poultry Seasoning Blend

Makes approx. 1/3 cup of seasonings

  • 2 tablespoons chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh sage
  • 1 teaspoon dried marjoram
  • ½ teaspoon ground black pepper
  • ½ teaspoon celery seeds
  • ½ teaspoon ground nutmeg

Asian Spice Blend

Makes approx. 1/3 cup of seasonings

  • 2 tablespoons yellow curry powder
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons ground ginger
  • 1½ teaspoons coarse sea salt
  • 1 teaspoon ground black pepper

Taco Seasoning Spice Blend

Makes approx. 1/3 cup of seasonings

  • 2 tablespoons chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons dried oregano
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon coarse sea salt
  • 1 teaspoon ground black pepper
