Do you have guests staying the night and need an easy breakfast dish for the morning? Look no further. This healthy and delicious breakfast casserole is sure to please. Serve with vanilla yogurt and bananas or drizzle with maple syrup and apple slices. The topping combinations are endless!

Oatmeal Granola Raisin Breakfast Casserole

This recipe is the perfect way to use your dried stored goods, like granola and oats, as wells as your water glassed eggs. Be sure to rinse your water glassed eggs well before using. Also, for those of you who love to can milk in a jar, this is the perfect recipe to showcase it. Want a thicker casserole? Feel free to double the recipe and add an additional 10 minutes to the baking time.

Ingredients

  • 3 cups rolled oats
  • 1 cup granola with almonds
  • 1 cup raisins
  • 1 cup brown sugar
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground cloves
  • ½ cup butter
  • 12 ounces evaporated milk
  • 3 eggs
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, combine the oats, granola, raisins, brown sugar, salt, baking powder, ground cinnamon, allspice and cloves. Mix well.
  3. Melt the butter and beat the eggs. Add the melted butter, evaporated milk, beaten eggs and vanilla extract to the oat mixture and mix well.
  4. Grease a 9×13 baking dish then add casserole mixture. Spread evenly and place in oven. Bake for 40 to 45 minutes or until casserole is set.
  5. Remove from oven and allow to cool for 5 minutes before serving.
